Make him feel comfortable

Unless your prospective candidate knows what the job needs of him he cannot tell you how best he can help you prosper. E.g it is not enough that you need a Travel Executive you might be looking for someone who deals with Indian destinations in particular. Once he has this much of information he would provide you more information about his knowledge of Indian destinations or relevant experience in similar jobs. Else he would just be frank enough and say he would like to learn with you.
